When a Soil Moisture Sensor Registers Distilled Water "Dry As A Bone"

Contributor Ben Selinger, writing for the Office for Science and Society at McGill University wonders about a moisture sensor device  that reported distilled water as "dry." 
 
Hmmmm.

The instrument is used to measure soil moisture in house plant pots.

He includes a little experiment you can do with such a sensor to explore the behavior of the instrument.

Then he explains what is going on.
